Rainbow Quinoa Salad
• 1 cup dried quinoa
• 1 cup diced bell pepper
• 1 cup black beans, drained
• 1 cup cherry tomatoes, diced
• 1 cup sweet corn
• ¼ cup extra virgin olive oil
• juice from one lemon
• 1 tsp garlic salt
• ½ tsp sugar
• ½ tsp salt
Instructions:
1. Cook the quinoa as instructed.
2. When the quinoa is finished cooking, add it to a large bowl and mix together the bell pepper, black beans, cherry tomatoes, and corn.
3. In a seperate bowl, whisk together the olive oil, lemon juice, garlic salt, sugar, and regular salt. Drizzle over the quinoa salad and mix till evenly combined. Enjoy!
